Ground beef or chicken (omit for vegetarian nachos)
For the cheese sauce:
1 cup Silani Nacho cheese
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk (whole or 2%)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chili powder (for some heat)
Salt (to taste)
Toppings:
Salsa
Sour cream
Sliced jalapeños
Cilantro
Diced red onions
Lime wedges
Instructions
1. To make the cheese sauce, melt butter in a saucepan over medium heat, then add the flour and stir continuously for 1-2 minutes to create a paste.
2. Slowly add the milk, whisking to avoid lumps. Continue cooking until the sauce thickens, about 3-5 minutes.
3. Stir in the Silani Nacho cheese, then add garlic powder, onion powder, chili powder, and salt.
4. Cook the ground beef or ground chicken (if using) until fully cooked, seasoning with cumin, chili powder, paprika, garlic powder, and salt (or premade taco seasoning).
5. Assemble the nachos by layering the chips, adding the meat (if using), and toppings as desired. Then, serve a generous spoonful of salsa and dollop of sour cream.
