Mozzarella Crepes with Honey and Berries

A little bit savoury and perfectly sweet.

Ingredients

For the crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/4 tsp vanilla extract
  • Pinch of salt

For the filling:

  • 8 oz fresh Silani mozzarella, drained and cut into small cubes
  • 2 tablespoons honey
  • 1/2 tsp vanilla extract
  • Pinch of cinnamon
  • Fresh berries (strawberries, raspberries, blueberries) for garnish
  • Powdered sugar for dusting (optional)

Instructions

1. In a bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and a pinch of salt until smooth. Let sit for 15-30 minutes to thicken.

 

2. Heat a non-stick skillet over medium heat. Lightly grease it with butter or cooking spray. Pour a small amount of batter into the pan (about 1/4 cup) and swirl the pan to spread the batter evenly. Cook for 1-2 minutes until the edges start to lift, then flip the crepe and cook for 1 minute more. Remove from the pan and set aside. Repeat until all the batter is used.

 

3. In a bowl, combine the cubed Silani mozzarella, honey, vanilla extract, and a pinch of cinnamon (if using). Mix gently to coat.

 

4. Lay a crepe flat on a plate. Spoon a generous amount of the sweetened Silani mozzarella mixture in the center of the crepe.

 

5. Fold the crepe into a quarter or roll it to enclose the filling. Repeat with the remaining crepes.

 

6. Drizzle additional honey on top, sprinkle with powdered sugar (optional), and garnish with fresh berries. Set it on the table and watch the wow-factor take effect!
