Mascarpone Berry Parfait

An indulgent dessert that's easy to prepare.

Ingredients

You'll need:

  • 1 cup Silani Mascarpone cheese
  • 1 cup heavy cream (chilled)
  • 2 tbsp powdered sugar (or to taste)
  • 1 tsp vanilla extract
  • 1 cup mixed berries (try strawberries, raspberries, blueberries, o r peaches)
  • 1-2 tbsp honey or maple syrup (for those with a sweet tooth!)
  • 1/2 cup granola or crushed biscuits (if you like a little crunch)
  • Fresh mint leaves as garnish

Instructions

1. In a medium bowl, whisk together the Silani Mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and thickened. You can opt to use an electric mixer to speed up the process.

 

2. In a separate bowl, toss the mixed berries with honey or maple syrup (if using) and let them sit for a few minutes to soak up the sweetness.

 

3. In serving glasses or bowls, add a layer of mascarpone cream, then add a layer of berries, and repeat. This is also the time to add a sprinkle of granola or crushed biscuits between the layers if you’d like an added crunch.

 

4. Refrigerate the parfaits for at least 30 minutes to let the flavours meld together. Just before serving, garnish with fresh mint leaves for a pop of color and fresh finishing touch!
